Our Story
Guajillo was opened more than 25 years ago with a simple but meaningful goal: to bring authentic Mexican flavors to Northern Virginia. What began as a passion for traditional cooking grew into a place where every detail matters, from the way food is prepared to the way people are welcomed at the table.
The restaurant is proudly women owned and operated, led by Karen, who was born and raised in Northern Virginia and has poured decades of dedication into building Guajillo into what it is today. She now works alongside her daughter, Abi, continuing a family tradition that values hospitality, hard work, and staying true to the flavors that inspired the restaurant from the start.
For Karen, great food begins long before it reaches the table. She personally sources and tastes every ingredient before it is ever purchased, working closely with trusted suppliers to ensure each dish meets her standards for quality and freshness. That hands-on approach is reflected throughout the menu, especially in her personal favorites, the enchiladas and carne a la Mexicana, dishes that capture the heart of Guajillo’s kitchen.
After more than two decades, Guajillo remains a place where food brings people together, where guests are welcomed like family, and where every meal is made with intention. We look forward to sharing our table with you.
